
Yossy Arefi’s book Snacking Cakes is one year old today! I can’t believe that—it feels like I’ve been baking from this book for years. It is, no joke, the only cookbook I have ever successfully used, and it has done wonders for my sanity this year. Truly, snacking cakes are the only kind of sweets (other than Christmas cookies) that I want bake.
As we speak, I am enjoying the Minty Chocolate Malt Cake, sans chocolate glaze, in mini mini bites. It is SO good and feels like it was perfectly formulated for me: airy, spongey, dark-chocolatey, and minty-fresh. As the name suggests, there’s malted milk powder (aka Ovaltine) in here, too, but I can’t really taste it.
